I love Thanksgiving food! Thanksgiving turkey dinner is my favorite holiday-related food. I think it even beats Christmas fudge! I always try to buy the biggest Thanksgiving turkey that I can, so that I have lots of leftover turkey. If I’m going to spend a lot of time to make a big meal, I want to eat that food for dayyyssss. I’m always looking for a new leftover turkey recipe to use up those leftovers!
I like to have a few ready-to-go leftover turkey recipes in my arsenal. It’s nice to have a few different leftover turkey recipes to mix things up. Since I like to get such a big turkey, I can usually make a few dinners from the turkey. My husband likes plain turkey sandwiches on wheat bread with salt and pepper. I love to make casseroles and soups with leftovers. It’s the kind of warm comfort food that just gives you a hug from inside.

This turkey zucchini casserole is awesome because it has vegetables in it. If I cut everything small enough, I can usually get my kids to eat them! While this leftover turkey recipe includes zucchini and carrots, you could easily add mushrooms if your family likes them. It’s a great way to add additional veggies!

Turkey Zucchini Casserole Recipe
First, preheat the oven to 350 degrees and get your ingredients ready. You need diced zucchini, diced leftover turkey, a package of stuffing mix, shredded or diced carrots, diced onion, cream of chicken soup, sour cream, and butter.
In a large bowl, combine the stuffing and melted butter. Set about 3/4 cup of the mixture aside.
In the same bowl, add the remaining ingredients.
Mix all of the ingredients well.
Pour the turkey mixture into a greased baking pan and spread flat.
Sprinkle the remaining stuffing mixture on the top.
Bake for 30-40 minutes or until the top is golden brown.
Serve and enjoy.
Turkey Zucchini Casserole
This recipe is perfect for using up leftovers from your Thanksgiving turkey!
Ingredients
- 1 6 oz. package of stuffing mix
- ¾ cups butter melted
- 3 medium zucchini diced
- 2 cups turkey shredded or diced
- ½ cup onion diced
- 1 can of cream of chicken soup
- 1 cup shredded carrot
- ½ cup sour cream
Instructions

Preheat the oven to 350 degrees.

In a large bowl, combine the stuffing mix and melted butter. Set aside about ¾ cups of the mixture.

In the same bowl as the stuffing, add the remaining ingredients – zucchini, turkey, onion, soup, carrot, and sour cream. Incorporate well.

Pour the mixture into a greased 13” x 9” baking dish. Sprinkle the reserved stuffing/butter mixture over the top.

Bake 35-40 minutes or until the top is golden brown.
